I’m so excited about this Cookie Series we are doing and these Coconut Cookies are the best ones to start with. Seriously though, these cookies are AMAZING. I do love coconut so I am a little biased but even those that don’t love coconut still love these cookies.

If you don’t try any of my other cookies, you HAVE to try these.

There is nothing special about the instructions on making these cookies. All cookies are basically the same, cream the butter and sugar, add the egg, vanilla, and coconut extract. Mix that then add the dry stuff and the coconut. Bake them at 350 degrees for about 10 minutes. Easy peasy.

Coconut Cookies

1 cup butter (2 cubes), softened
1 ½ cups sugar
1 egg
1 tsp coconut extract
½ tsp vanilla extract
2 ¾ cup flour
1 tsp baking soda
½ tsp baking powder
1 cup shredded coconut

1-Make sure you have all your ingredients and clean your work area.
2-Turn your oven onto 350 degrees.
3-Make sure your butter is soft and put it in a mixer. We love the Bosch mixer.
4-Mix the butter until smooth.
5-Add the sugar and mix it again. You want it to get smooth again.
6-Add your egg, coconut extract, and vanilla extract and mix. This time it will get more creamy. Scrape down the sides and mix again.
7-Add the flour, baking soda, and baking powder. Mix it together. Scrape the sides and mix again.
8-Add the coconut and mix it again.
9-Get a cookie sheet and your silicone sheet ready.
10-We used a #20 scooper or a 2 tbsp. You can use a smaller scooper to make smaller cookies if you want. This size will make about 20 cookies. Scoop 12 cookies on your sheet pan and bake for 10 minutes or until they start getting a golden color around the edges.
11-Clean up the mess while the cookies are baking.
12-You can also scoop your cookies on the sheet pan and cover it with a lid and put the sheet pan in the freezer. Once they are frozen you can place them in a bag and save them for later. I love doing this because you can bake a few at a time instead of having a whole batch of cookies. If the balls are frozen, then bake them at 325 for 15-18 minutes.
