No-Bake Toffee Cookies

I really wanted to do a No-Bake Cookie in my cookie series but I don’t love the typical No-Bake Cookie. When I found this one with I just had to try it. It was so much better to me than the typical one. We love Caramel and especially Toffee pieces at our house so these were a perfect experiment. Since we are sharing them with you, you know that we liked them.

Even though it might look like baby poop in the pan, they do taste delicious.

With the added butterscotch flavor it makes the whole cookie more rich and not too chocolaty like the typical recipe. The chocolate chips melt slightly and make it a creamy and smooth chocolate texture with the added little crunch of the Toffee Pieces.

I love being able to freeze cookies and once they have set you can freeze these and they still taste delicious. The added bonus is that you don’t have to bake them when you want one. It’s like reaching into the freezer and grabbing a ball of cookie dough only these don’t have the raw egg in them. I would never do that though 😉

Just like any cooking on the stove, make sure the kids are supervised while making these. The sugary syrup can get very hot so you want to avoid them getting burned.

All I’m saying is that if you like toffee, chocolate, and caramel flavor then you will love these quick and easy cookies.

No-Bake Toffee Cookies

2 cups Sugar
¾ cup Butter (1 ½ sticks)
â…” cup evaporated milk
3 ½ cups Quick Oats
3.4 oz package Instant Butterscotch Pudding
1 cup Chocolate Chips
½ cup Toffee Chips

1-Make sure you have all the ingredients and clean your work area.
2-Add the sugar, butter, and evaporated milk in a medium size pot and turn it on to medium high.
3-Let it come to a rolling boil.
4-Take it off the hot stove.
5-Add the quick oats and butterscotch pudding.
6-Let it sit and cool down for about 10 minutes.
7-While it’s cooking, clean up the mess and get a sheet pan ready with parchment paper.
8-Once it has cooled, add the chocolate chips and toffee chips.
9-Get two spoons and fill one spoon with the filling and use the other spoon to scrape it off the first spoon.
10-Keep doing it until all the mixture is gone.
11-Let them sit and cool for at least 30 minutes.
12-Clean up the mess.
