These crackers are super fun to make. Something I love about this recipe is that it teaches kids a little bit of patients. You have to do a little work, then wait, do a little more work, then wait some more.
We are all about instant gratification and these will help us all learn that things take time. Not too much time though.
CHEEZE-IT CRACKERS
1 ½ cups sharp cheddar cheese, grated
4 Tbsp cold butter, cut up¾ cups flour
⅛ tsp kosher salt (plus more for top)
½ tsp. Paprika
1 Tbsp. ice cold water
1-Wash your hands and clean your work area.
2-Add all your ingredients, except the water, into a medium size bowl.
3-Mix with a fork, a pastry blender, or your hands until all the butter has been mixed in.
4-Add the water if it isn’t coming together. Add more if needed. You want it to form a ball of dough but not be too doughy.
5-Form a disk and wrap it in plastic.
6-Place it in the fridge for about 30 minutes.
7-Place the dough between 2 pieces of parchment paper and roll it out until it’s about ⅛ of an inch thick. The thinner the better.
8-Using a pizza cutter, cut the dough into 1 inch squares. Use a toothpick and stick each square in the middle.
9-Sprinkle some kosher salt on top if you want.
10-Spread the crachers out on a parchment sheet and put them in the fridge for another 10 minutes.
11-Preheat your oven to 350 degrees and bake them for 14-15 minutes.
12-Clean up mess.
