I will say over and over that there is nothing better than having your kids make dinner. Because Libby has helped me make these burritos a few times, it has become one of her favorite meals.

I love that fact because it’s easy to keep the ingredients for the burritos on hand and it’s cheap and filling. Add a few chips and toppings to go along with the burritos and you’ve got yourself a full meal. Of course it’s always a good idea to add some fresh fruit or vegetables as well.

Bean burritos

Since I did work at two fast food taco places, I have quite the experience in rolling burritos too. Make sure to watch the video to see how to roll them up.

Bean Burritos

1 can, large or small of refried beans
1 package, Mission brand burrito size tortillas
Shredded cheddar cheese
Aluminum foil
¼-½ cup water

1-Make sure you have all your ingredients.
2-Wash hands and clean work area.
3-Open can of refried beans and dump it in a mixing bowl.
4-If you have a small can of refried beans, add ¼ cup of water. If you have a large can, add ½ cup of water. Mix.
5-Open your tortillas and lay them out on your clean counter.
6-Spoon beans on the middle of the tortilla.
7-Sprinkle some cheese on the beans.
8-Watch the video to see how we roll them up.
9-Wrap them up in aluminum foil and place on a baking pan.
10-*With the help of an adult. Put them in the oven set to 400 degrees for 15-20 minutes.
11-Clean up work area while it cooks.
12-Get your toppings ready if you want. We used sour cream, guacamole, and some pico de gallo with a side of chips. Do whatever you want, it doesn’t really need anything if you don’t want.
