With school finally here, my kids won’t be getting that mid-morning snack that they’ve become accustomed to all summer. I like foods that fill them up for longer and this granola recipe is PERFECT for that. It’s packed full of the good stuff to keep them satisfied for way longer than the sugar cereals. I love the amount of almonds in it too because it’s such a good protein for them to have to keep them satisfied for longer.

It really breaks apart into good chunks once it has cooled down.

Even though this recipe doesn’t take long to make, I still triple the recipe because for our family.

Make sure not to fill the bowl like you normally would. This stuff is way more filling. Add some fruit for good measure and the kids are set for school.

Granola

1 cup almonds
3 cups old fashioned oats, quick oats are fine too (or a total of 3 cups of dry grainy stuff. We used some ground flax seed but probably should have only done 2 tbsp. You can add wheat germ, chia seeds, coconut or whatever you want)
½ tsp. salt
⅓ cup brown sugar
⅓ cup honey
3 tbsp coconut oil
¼ tsp. Vanilla extract

1-Make sure you have all your ingredients.
2-Clean up your work area.
3-Turn oven on to 350 degrees.
4-Measure out almonds and pour them in a food processor. You want half of them to be ground up pretty fine and the other half to still have some chunks.
5-Measure the oats, salt, brown sugar, and pour the ground and chopped almonds in a medium sized mixing bowl. I usually make three times this recipe and do ½ cup of ground flax seed so you probably don’t want ½ cup in this much granola. Maybe just 2 tbsp. You can do a total for 3 cups of dry stuff. Just make sure most of it is oats. Quick oats are fine too.
6-Mix it all together.
7-Measure out the honey and coconut oil into a separate bowl that can go in the microwave.
8-Cook the honey and oil in the microwave for about 30-40 seconds.
9-Take the honey and oil out of the microwave and pour the vanilla in with it.
10-Stir it around.
11-Once it’s all mixed. Place on a cookie sheet lined with a silicone sheet or parchment paper. (This isn’t necessary but it makes it a lot easier once it has cooled).
12-Place in the oven and bake for 7 minutes.
13-During that time it’s a good time to clean up.
14-Take out of the oven and stir it around so that it cooks evenly.
15-Place back in the oven for another 7 minutes.
16-Take it out of the oven and stir it around.
17-Let it cool down.
18-Break it apart and put it in an air-tight container.
19-Eat it with milk or yogurt or make a parfait (video to come).
20-Finish cleaning up mess.
