These Pineapple Smoothies are really refreshing and super healthy. My kids are constantly asking for Popsicle and Otter Pops and these are such a good alternative to all the sugary stuff out there.

The funny this is that some of my kids don’t even like pineapple but they all LOVED this stuff and wanted more.

It only takes two ingredients! TWO!

I choose my pineapple using 3 different methods.

1)If a leaf on top comes out easily.
2)Look at the bottom and look for a little mold. Once it starts to get a little mold then it’s nice and ripe.
3)Smelling it is always a great way to tell if fruit will taste good.

Bam! We got ourselves a great pineapple.

Cut up the fruit and place on a sheet pan lined with a silicone mat. It comes off way easier than putting it straight on the sheet pan. I also like to cover it with a sheet pan lid. I have so many of these and use them ALL the time.

Freeze the pineapple for 3+hours. Overnight is great. If you freeze for a few hours then 1 1/2 cups or less of milk is plenty. If you freeze overnight then you’ll need closer to 2 cups. Every pineapple is a different size so amounts will vary every time.

Stick the frozen pineapple in the blender with the coconut milk and mix carefully. You don’t want to overheat your blender so be very careful. The Vitamix is super powerful and made for this type of thing. If you have a lower quality blender only do half at a time and add more coconut milk.

Eat it like a smoothie. We were able to suck it up with a straw easy enough.

My favorite was to freeze the mix a little longer and make it into more of an ice cream consistency. Only freeze it for a few hours. If you freeze it longer it gets rock hard and you can’t scoop it very well. You will have to let it sit out for a bit before you can eat it.

Either way, it’s delicious.

Pineapple Smoothie

1 Pineapple
1 ½-2 Cups Coconut Milk

Blender

1-Make sure you have your ingredients and clean your work area.
2-Cut the top, bottom, and rind off of the pineapple.
3-Slice up the pineapple into smaller pieces and place them on a sheet pan with a silicone mat.
4-Cover the pineapple if you have a lid and place in the freezer. Let it freezer for 3-4 hours or overnight.
5-Once the pineapple has frozen through, place the frozen pineapple into a strong and heavy duty blender. I prefer the Vitamix.
6-Add 1 ½ cups of Coconut Milk and start to blend. If the blender is struggling and not blending well, add more coconut milk. Blend until it’s all smooth and creamy.
7-You can pour it into cups and serve immediately or you can freeze it for 3-4 hours and scoop it out. It serves like a creamy, fresh sorbet.
8-Clean up the mess.
