Ugly Soup? What? What kind of name is that? Well, let me tell you. It’s just about the best soup there is out there and probably the easiest. It’s so easy that a kid could make it. As long as your kid isn’t scared of it being called Ugly Soup. All they need to do is know how to use a can opener. I really should get an electric one or something because my kids really struggle with ours.
I was at a church function over 2 years ago where it was pot luck soup dinner. If you can imagine about 20 different crock pots full of soup and you are supposed to pick one. JUST ONE. It is near impossible. So I did something crazy. I tried the one that looked the grossest. I trusted the person who brought it though and the others looked pretty common. There was the typical chicken noodle, minestrone, clam chowders and I wanted something new. Best decision ever! My life has forever been changed because of it. Okay, maybe not, but seriously, this ugly soup is so good. I keep all the ingredients on hand at all times. It’s such a quick go-to recipe if I ever run out of time.
It really doesn’t matter how many pictures there are of it, it still looks, well…ugly.
Ugly Soup
1- 15.25 ounce can of corn or 1 ½ cups frozen corn
1- 15 ounce can black beans
1- 28 ounce can mild green enchilada sauce
1- 10 ounce can chicken breast
Toppings:
Shredded cheese
Tortilla chips
Sour Cream
1-Make sure you have all your ingredients.
2-Clean your work area and wash your hands.
3-Using a can opener, open all the cans.
4-Drain and rinse the black beans.
5-Drain the corn juice.
6-Dump everything into a medium-large saucepan or dump in a crock pot.
7-Cook until heated through.
8-Get your toppings ready.
9-Clean up mess.
